Best Healthy Chicken Meatballs, Eva!

I love meatballs, and if you don’t, we can’t be friends. No, no – I’m kidding. We can still be friends! But if you don’t like meatballs, I’m challenging you to think outside the box and try my Best Healthy Baked Chicken Meatballs, Eva! Made with ground chicken, frozen spinach (so many nutrients and antioxidants), parmesan cheese, and nutritional yeast, these scrumptious meatballs are low-carb, protein-packed, flavorful, and so easy to prepare!

As with other recipes I’ve shared, I don’t usually include nutritional info – I’m not a chef or a nutritionist; rather, I’m just a Jewish mommy who loves feeding her family healthy food. You can take any recipe and stick it in a recipe nutrition tracker for exact details. Just know that everything included in this recipe is good for you and yummy! Feel free to do that with this chicken meatball recipe, which, BTW, my hubby says is the best! So there!

Best Healthy Chicken Meatballs, Eva – Easy & Delish!

We all know by now the multiple benefits we reap from consuming spinach – both raw and cooked, but did you know you can get extra vitamins by incorporating nutritional yeast into your diet? You can learn more about nutritional yeast here, but the quick explanation is that “nutritional yeast is a highly nutritious vegan food product with various potential health benefits. It can be used to add extra proteinvitaminsminerals, and antioxidants to meals. Studies suggest that nutritional yeast may help protect against oxidative damage, lower cholesterol, and boost immunity,” according to healthline.com.

I use nutritional yeast to replace breadcrumbs. It has an almost parmesan cheesy taste, and it works well as a replacement in so many recipes. One of my favorite brands is Frontier Co-op Premium Nutritional Yeast. Fun fact: Nutritional yeast is the same type of yeast used for baking bread and brew beer. Cheers!

Let’s Bake the Best Healthy Chicken Meatballs, Eva!



  • 1 pound ground chicken (I like ground chicken as opposed to ground chicken breast
  • 1 large egg
  • 1/2 cup nutritional yeast (or ½ cup any of your favorite breadcrumbs if you aren’t carb-conscious) (or almond meal!)
  • 1/3 cup grated parmesan cheese (no cellulose powder)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons Italian (or any) parsley
  • 2 tablespoons tomato paste
  • 5 ounces defrosted, drained frozen spinach


Place a rack in the upper third of your oven and set the oven to 400 degrees F. You can then either use a 9×13-inch baking dish or rimmed baking sheet, sprayed with a non-stick spray, or do what I do – line my baking sheet (or dish) with tin foil, spray with non-stick spray. Easy peasy cleanup!

Beat the egg in the bottom of a large bowl. Add the ground chicken, nutritional yeast, parmesan cheese, 1 tablespoon olive oil, all the spices, and the tomato paste.

Then, add the defrosted, drained (I use a clean dishtowel to squeeze out any extra water from the spinach) package of spinach, and then use your hands (you can add a touch of olive oil or water to your hands to keep the meatballs from being sticky) to combine all of the ingredients. Don’t overmix.

Shape 12 chicken meatballs and arrange them on the prepared baking sheet. Pop in the oven for 18-22 minutes.

To Serve

Palmini and Raos

If you want some suggestions as to what to serve with your chicken meatballs, I recommend spaghetti squash or  Palmini Hearts of Palm Linguine, doctored up (salt, pepper, garlic, onion) cauliflower rice, or a delish whole wheat pasta or chic pea pasta like Eat Banza Linguine, if you don’t care about low-carb. Add a jar of Rao’s Marinara sauce, or any healthy tomato sauce, a leafy green salad, and you’re done.

    I have never made chicken meatballs but they sound delicious!
    I am a big fan of spaghetti squash and love using it as a substitute for pasta.
