Low-Calorie, Healthy Breakfast Quiche


Do you love quiche but hate the calories? Try my crustless egg white quiche! It’s light, luscious, and I promise you’ll make it again and again. 🤩🤩


32 ounce package of your favorite liquid egg whites
2 large handfuls of spinach rinsed and roughly chopped
1 cup of diced or sliced mushrooms
1/2 – 1 cup of your favorite peppers diced (I mix up red, yellow, green)
1/2 cup of feta cheese
1/2 cup of mozzarella cheese

Preheat your oven to 350 degrees. Spray a glass 9 inch pie/quiche pan, set aside.

Prep the veggies and then either mix them all together and add to sprayed pan, except for the mozzarella cheese, or, you can also layer each of the above ingredients instead of mixing together. Top with the mozzarella cheese.

Let it cool about 15 minutes and serve with a side of a fruit, or a salad. Perfect breakfast or lunch! And it’s good in the fridge easily five days. And freezable too!

Pro tip: feel free to change out the veggies and add ham, bacon, different cheeses. Make it your own! 👏🏻👏🏻
