Crockpot Honey Garlic Chicken

As soon as the temperatures lower I immediately get the urge to break out the crockpot. A crockpot meal is the easiest way to make a delicious comfort meal. I am so excited to share with you a meal that is always a hit in our house, honey garlic chicken. Pro tip: to make clean up even easier be sure to use a crockpot liner!

Ingredients

1 1/2 lbs. Boneless, skinless chicken thighs

1/3 cup low-sodium soy sauce

2 tablespoons tomato paste

2 teaspoons chili paste

4 garlic cloves

1 tablespoon rice vinegar

2 tablespoons corn starch

For Serving:

brown rice

toasted sesame seeds

chopped green onion

Instructions

1. Place the chicken thighs in the bottom of the crockpot. Whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour over the chicken. Cover and cook on low for 4 or 5 hours, or if in a pinch cook on high for 2 to 3 hours. If you are able, flip the chicken over half way through cooking so both sides can be covered in the marinade.

2. Remove the chicken and let it cool slightly. Whisk the cornstarch into the crockpot cooking liquid. Cover and cook on high for 15 minutes, until the sauce thickens slightly, stirring occasionally.

3. With 2 forks shred the chicken and add it to the crockpot. Stir to coat the chicken with the sauce. Serve with rice, green onions, and sesame seeds. Enjoy!

I have added a video, so you can cook along with me!
